Healthy quinoa recipe for weight loss with vegetables and herbs
Ingredients
- ½ cucumber sliced
- 1 bell pepper any variety: red, yellow, orange, green sliced
- 2 scallions chopped
- 1 Tbsp sesame oil
- ¾ cups frozen peas may substitute for fresh peas
- 1 garlic clove crushed
- 1 Tbsp light soy sauce
- ¼ cup pine nuts may substitute for crushed or sliced almonds
- ½ cup red or white cabbage chopped or sliced
- 4 cups quinoa cooked
- 1 slice of lemon
- Sea salt and pepper to taste
- Fresh greens for garnish
Instructions
- Cook quinoa for about 10-12 minutes. Drain and set aside in a bowl. Allow to cool.
- Chop and slice all remaining vegetables. Add them to the bowl with quinoa.
- Add peas, soy sauce, sea salt and pepper to taste.
- Combine all ingredients with a nice mixing movement.
- Garnish with pine nuts or crushed almonds. Squeeze lemon juice over the salad.
- Serve to enjoy all the fresh flavors and know that you are eating for glowing skin, good digestion and, ultimately, for your healthy weight.
